Ingredients

 

1 pound ground beef
1 package (1.25 oz) taco seasoning mix
1 can (4.5 oz) diced green chilis
1 C milk
2 eggs
½ C baking mix
1 C shredded cheese of choice (Cheddar, Monterey Jack, Pepper Jack)
Jalapenos (optional)
Salsa to garnish
Sour cream to garnish

Preparation

 

Preheat oven to 375 degrees. Cook ground beef over medium heat until browned. Drain excess grease, if any. Stir in seasoning mix and green chilis. Lighly grease a mini muffin pan. Evenly divide ½ of the meat mixture between the 24 muffin cups. In a large bowl, mix the milk, eggs, and baking mix. Spoon ½ of the egg mixture evenly between the meat filled muffin cups. Bake for approx 10 to 11 minutes. Remove from oven. Evenly sprinkle ½ of the cheese on the tops of the 24 muffin cups. Put back in oven and bake for approx 3 to 4 minutes, or until cheese is melted. 
 
Repeat process with remaining ingredients for a second batch. Serve with jalapenos, salsa and sour cream.
